I have always said star rankings are like SAT scores. A high SAT score does not guarantee success in college, but more kids who succeed get high test scores. Likewise, a 5-star does not guarantee a star player, but more 5-stars succeed at a high level than 2-star players.

I will agree stars are not a predictor but if I had my choice I would like 5 star WR, Conerbacks, RB and QBs. LB, Linemen, and Safeties I want guys that are grinders and have a chip on their shoulders.
